What's Growing?
Pak Choi
Pak Choi (also known as Bok Choi) is a type of Chinese cabbage. Pak Choi is a high in vitamins A, C, and K. Add this tender green to your soups, salads, or stir frys.
Genovese Basil
Genovese Basil is the king of pizza, pasta, and pestos. High in vitamin K and manganese. Fun fact: basil deters insects, and we grow it all over the farm.
Arugula
A bitter green you either love or hate, a lightly-dressed handful of Arugula makes an excellent healthy topping to your pizzas, lasagnas, and sandwiches. Vitamin K and Folate are Arugula's top nutrients.
Lettuce (Varieties)
We grow a variety of lettuces: Buttercrunch, Butterhead, Ice Queen, and Nevadan. Nothing like a cool, crisp crunch of locally grown lettuce. Lettuces aren't prized for their vitamins, but ours are as good as they get!
Lemon Balm
Related to mint, Lemon Balm is often used in teas, pestos, and many other dishes. We grow Lemon Balm for sale, but also to help support local pollinators.
Wheat Grass
Available by the tray, we germinate hard winter wheat berries in organic Fox Farms soil. Wheat grass juice is filled with micronutrients and chlorophyll, and the juiced grass makes for great compost.
Microgreens
In general, microgreens contain considerably higher levels of vitamins and carotenoids—about five times greater—than their mature plant counterparts. Cilantro, amaranth, peas, and chives are a few of our favorites.
